Amaranth, an ancient grain cultivated by the Aztecs, is emerging as a highly nutritious dietary choice. Nutritionists recommend it as superior to brown rice and quinoa due to its high content of manganese, iron, fiber, protein, and antioxidants. Studies suggest that consuming amaranth may lower cholesterol, aid weight loss, and reduce inflammation. Dietitian Lindsay Schoenfeld emphasizes that amaranth contains all nine essential amino acids, making it ideal for vegetarians and vegans. Additionally, it is naturally gluten-free. Nutritionally, a 100-gram serving of amaranth provides approximately 100 calories, 3.6 grams of protein, and 2 grams of fiber, slightly more than brown rice and quinoa. Research on animals has shown that amaranth oil can reduce total cholesterol and LDL (“bad”) cholesterol. The mechanism behind this is not fully understood, but scientists believe amaranth may bind to cholesterol in the gut. The high fiber content also contributes to weight management by increasing satiety. Finally, amaranth is rich in phenolic acids, powerful antioxidants that can reduce inflammation and protect against cardiovascular disease. However, experts emphasize that it is not a “magic” solution, but rather a part of a balanced and varied diet.
